What is darling to rustic Punjab in cold weather months is sarson da saag, tenderly stewed over the low flame in “Mitti ki Handi” in an angithi or chullah. Generally, saag is set up in huge amounts to be burned-through. The tadka is added distinctly to the part that is being served. Serve hot, finished off with spread, with sarson ka saag. The new and sweet taste of corn makes these rotis exceptional.
